Ingredients
1. 1 C dried beans

ham bone or bacon rind
3. 1/4
head of sm cabbage
4. Salt

sm onion, chopped

stalk celery, chopped

carrot, diced
8. Some
parsley, chopped
9. Zucchini
squash, chopped
10. 1
sm potato, diced
11. 1/2
to 1 C pasta, uncooked
Method of preparation
1. Cook first 4 ingredients with water until beans are very tender.2. Remove bone or rind. Remove 1/4 cup of beans and put these in a large kettle. Put rest of mixture through a colander or strainer. Add this to the kettle. Add enough water to make desired amount of soup.
3. Saute onion, celery, parsley and squash in hot olive oil until tender. Add 1/2 to 1 can of tomato sauce (to taste).
4. Add mixture to large kettle. Add the potato and the pasta (usually sm shells) to kettle. Cook on medium heat until medium thick.
