Medium Tomatoes

cup Crumbled Feta or Goat Cheese
Method of preparation (Instructions)
1. Slice
the tomatoes into small wedges. Slice the red bell peppers into 1 inch pieces.
Thinly slice the cucumbers. Finely chop the white onion (I used half of the
onion).
2. Combine all of these ingredients in a large bowl.
3. Drizzle with abut 2 tablespoons of olive oil. Add 1 tablespoon of red wine vinegar if you want. Then add a couple pinches of salt. Toss to combine.

the salad for at least 2 hours. Before serving, top with the parsley and
